Carrot - 250 gm
Fresh grated coconut - 3-4 tbsp
Green chillies - 3
Red chillies- 2
Mustard seeds - 1/2 tbsp
Cumin seeds - 1/2 tbsp
Bengal gram - 1/2 tbsp
Urad dal - 1/2 tbsp
Turmeric - pinch
Curry leaves - 1 leaflet
Salt - as per taste
Procedure:
- Wash, clean and peel off the carrots. Chop them in to cubes, par-boil and set aside.
- Take a kadai, heat oil, add mustard seeds, cumin seeds and let them splutter.
- Add bengal gram, urad dal, green chillies, red chillies, curry leaves and fry them.
- Now drop all the par-boiled carrot cubes and fry them for few minutes,
- Sprinkle some turmeric, salt and mix well.
- Once the carrot cubes are almost cooked, add freshly grated coconut and stir well. Wait for 1-2 minutes and switch off the flame.
