Cauliflower Koora (Cauliflower -Green Peas Masala)


Ingredients:
Cauliflower florets - 2 cups
Green peas - 1/4 cup
Onions (large) - 2
Green chillies - 3
Ginger-garlic paste - 1 tbsp
Coriander powder - 1/2 tbsp
Cumin powder - 1 tbsp
Turmeric - 1/4 tbsp
Salt - as per taste
Curry leaves - 1 leaflet
Coriander leaves - 3 tbsp
Oil - 2 tbsp

Procedure:
  1. Wash, clean and chop cauliflower in to medium sized florets and boil them in water with turmeric for 4-5 min.
  2. After boiling, strain out cauliflower florets from hot water and sprinkle some cold water (to prevent over cooking) on them and set aside.
  3. Now take a pan and heat oil. Add chopped green chillies, curry leaves and stir well.
  4. Add finely chopped onions and saute them, until they turn transparent.
  5. Add turmeric, ginger-garlic paste and stir well.
  6. Now add coriander powder, cumin powder, salt and mix well.
  7. Add boiled cauliflower florets, green peas and saute under low flame by closing the lid for 2-3 min or until the pieces turn soft.
  8. Finally garnish with finely chopped coriander and serve hot with rice or roti.

TIP: Do not boil the cauliflower florets for long time (over cooking may crumble them). Most of the times, we find worms in cauliflower, it is advisable to wash and boil them with turmeric before cooking.
