Green chillies - 10
Besan flour (Senagapindi) - 1 cup
Ajwain (Vaamu) - 1 tbsp
Tamarind juice - 3 tbsp
Salt - as per taste
Baking powder - 1/2 tbsp
Oil - sufficient
Procedure:
- Wash, clean, slit green chillies, remove seeds from them and set aside.
- Grind vaamu, salt, together to get fine powder. Now add tamarind juice, 1 tbsp besan flour and mix to form a paste.
- Stuff the prepared paste in to green chillies and keep aside.
- Add water, salt, baking powder to besan flour to form batter.
- Now dip the green chillies one by one in to batter and fry them in oil.
- Drain all the bajjis in to a plate with tissue paper.
- Finally stuff them with finely chopped onions, coriander leaves, lemon juice and serve hot. Enjoy!!!
TIP: If the batter is too loose, it will not stick well to green chillies. Similarly if batter is too thick, the bajjis will turn hard. Be sure that the batter is of proper consistency.
