Ingredients:
Basmati Rice - 1 cup
Cabbage - 1/2 cup, finely chopped
Carrot (large) - 1, finely chopped
Capsicum (Green) - 1/4 cup, finely chopped
Capsicum (Orange) - 1/4 cup, finely chopped
Capsicum (Yellow) - 1/4 cup, finely chopped
Green beans - 1/4 cup, finely chopped
Capsicum (Yellow) - 1/4 cup, finely chopped
Green beans - 1/4 cup, finely chopped
Onion - 1/4 cup, finely chopped
Green onions (Spring onions) - hand full
Green chillies - 2, finely chopped
Finely grated garlic - 1/2 tbsp

Garam masala - 1/4 tbsp
Ground black pepper - 1/2 tbsp
Soya sauce - 1 tbsp
Fennel seeds - 1/4 tbsp
Cumin seeds - 1 tbsp
Ghee - 1tbsp
Cashews - 10

Ghee - 1tbsp
Cashews - 10
Salt - as per taste
Oil - 2 tbsp
Procedure:
- Wash, clean and chop all vegetables and set aside.
- In a pressure cooker, cook rice by adding salt, 1/2 tbsp butter.
- Take a pan, add oil and heat it.
- Add fennel seeds, cumin seeds, cashews, chopped green chillies and stir them.
- Add chopped green beans followed by cabbage, carrots, capsicum(green, yellow & red) and cook them.
- Once all the vegetables turn little bit soft, add chopped onion and stir well.
- Then add soy sauce and mix well. Now add pepper, garam masala, salt and stir.
- Finally add chopped green onions, boiled rice and stir gently.
- Saute it under very low flame for 2 min by covering the lid. Serve hot with onion raita.
TIP: As I mention regularly, do not overcook the vegetables. If the vegetables are cooked for long time, they become too soft and crunchiness will be lost. Similarly, the natural flavor will be spoiled. So, right cooking of vegetables is the important step in making fried rice. On the other hand, the rice should not be sticky and the grains should be separate after cooking. Use fork to mix the rice in vegetables, so that the texture of rice will not be disturbed.
