Onion pakoda (Ullipaaya pakodi)



Ingredients:
Besan flour(Senagapindi) - 1/2 cup
Onions - 2
Green chillies - 2
Ginger - half inch piece (optional)
Curry leaves (finely chopped) - 1 or 2 leaflets
Coriander leaves - 2-3 spoons
Salt -  as per taste
Oil - sufficient for frying
Water - sufficient

Procedure:
1. Finely chop green chillies, ginger and onions length wise in to thin pieces.
2. Take a medium sized mixing bowl, add onions, green chillies, ginger, besan flour, salt, chopped coriander, curry leaves and mix well using little water until the batter is formed.
3. Take a large frying pan, add oil and wait until it is hot. Then add the batter in to oil as fritters(pakodas).
4. Let them fry over both sides for few minutes and drain them in to plate with tissue paper, so that the excess oil will be absorbed.



TIP: Once the oil attains the right temperature and batter is added, let them be roasted in medium flame only. So that the colour of fritters will not be changed and they will not be over fried.
