Paav - 8 pieces
Boiled potato (big) - 1
Capsicum (medium) - 1
Boiled Cauliflower florets - 7-8
Tomato (medium) - 1
Green peas - half handful
Onion - 1
Tamarind - amla sized
Ginger - 1/4 inch piece
Garlic cloves - 2
Turmeric - pinch
Garam masala - 1/2 spoon
Red chilly powder - 1/2 spoon
Green chilly - 1
Coriander leaves - 2-3 spoons
Salt - as per taste
Oil - 4 tbsp
Butter - 1-2 tbsp
Procedure:
1. Wash all the vegetables thoroughly.
2. Chop onion, capsicum, cauliflower, tomato as finely as possible and potato should be mashed.
3.Take a pan and add 1 spoon of butter and 2 tbsp of oil, when oil is heated, add finely chopped ginger, garlic, green chilly pieces and fry them for 1 minute
4. Add finely chopped onion followed by capsicum, cauliflower, potato, tomato pieces and green peas, saute them for few minutes until they are cooked.
5. Add tamarind paste and let them boil for 2-3 minutes.
6. Then add turmeric, red chilly powder, garam masala, salt and mix well.
7. Garnish with finely chopped fresh coriander leaves.
8. Take another pan, add 2 spoons of butter. Once the butter is melted, roast the pavs for 1 minute.
9. Finally serve pavs with prepared vegetable mix, chopped onions and lemon.
TIP: Be sure that all the vegetables are very finely chopped, so that the consistency of the vegetable mixture(bhaji) is attained properly.
